Malay cuisine is the ethnic Malays' cuisine in Malaysia, Indonesia (parts of Sumatra and West Kalimantan),Singapore, Brunei, Southern Thailand and the Philippines (mostly Southern). Different Malay regions are all known for their unique or signature dishes. The main characteristic in traditional Malay cuisine is undoubtedly the generous use of spices. Coconut milk is also important in giving the Malay dishes their rich, creamy character. The other foundation is belacan (shrimp paste), which is used as a base for sambal, a rich sauce or condiment made from belacan, chili peppers, onions and garlic. Malay cooking also makes plentiful use of lemongrass and galangal. Nearly every Malay meal is served with rice, which is also the staple food in many other Asian cultures. Although there are various type of dishes in a Malay meal, all are served at once, not in courses. Food is eaten delicately with the fingers of right hand, never with the left which is used for personal ablutions, and Malays rarely use utensils.

Historical background of the product sold :
They selling western food in a local twist. As we known, the origin of western food is from western countriesThe cuisines of Western countries are diverse by themselves, although there are common characteristics that distinguish Western cooking from cuisines of Asian countries and others. Compared with traditional cooking of Asian countries, for example, meat is more prominent and substantial in serving-size. Steak and cutlet in particular are common dishes across the West. Western cuisines also put substantial emphasis on grape wine and on sauces as condiments, seasonings, or accompaniments (in part due to the difficulty of seasonings penetrating the often larger pieces of meat used in Western cooking). Many dairy products are utilised in the cooking process, except in nouvelle cuisine. Wheat-flour bread has long been the most common source of starch in this cuisine, along with pasta, dumplings and pastries, although the potato has become a major starch plant in the diet of Europeans and their diaspora since the European colonisation of the Americas.Maize is much less common in most European diets than it is in the Americas; however corn meal (polenta or mămăligă), is a major part of the cuisine of Italy and the Balkans. Although flatbreads (especially with toppings such as pizza or tarte flambée), and rice are eaten in Europe, they do not constitute an ever-present staple. Salads (cold dishes with uncooked or cooked vegetables with sauce) are an integral part of European cuisine.

So, what about the local twist? Normally in Kota Kinabalu, Sabah, we have not only Chinese, Malay and Indian but we have also Bumiputra, that's why we have variety choices of our local food. Upcycled Cafe makes their food in a local twist, for exampla, tuhau and hinava is one of the kadazan cuisine, but they twist them into chicken and pizza. Besides that, curry is one of the famous spices that we used in Malaysia. One of the pizza at Upcycled Cafe is Ciabatta Pizza, an Italian style with local taste & ingredients. Other than that, they also have Banana Blossom Salad, Cabbage Acar and some special recipes, such as Chocalate Chicken & Coffee Chicken.

It was suspected that the old China man came to Beaufort by ship, or maybe there is some unforgotten memories on the board. So, he used "Foh Chuan" as the restaurant name when he opened his first restaurant in Beaufort. Foh Chuan has been carried forward by second generation. One of the owner of Foh Chuan Restaurant 's brother Wong said , they were five brothers and several sisters , all find it impossible to stay in Beaufort for long term. However , they had faced with some difficulties when choosing location for their restaurant. At first, rhey was thinking to open their branch in city, but they worried about there is limited parking lots for their customers. Finally, they choose Beverly Industrial and Commercial Center, this is because there's many parking lots.

Historical background of the product sold :
Foh Chuan Restaurant selling chinese cuisine(NON HALAL). Chinese cuisine includes styles originating from the diverse regions of China, as well as from Chinese people in other parts of the world including most Asia nations. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese people due both to imperial expansion and from the trade with nearby regions in pre-modern times, and from Europe and the New World in the modern period. In addition, dairy is rarely—if ever—used in any recipes in the style. The staple foods of Chinese cooking include ricenoodlesvegetables, and sauces and seasonings.
